Super Airy Blueberry Jam Mousse Filling

In a small bowl, sprinkle 5g of unflavored powdered gelatin over 30g of cold water. Let it sit to bloom for 5 to 10 minutes until firm.

In a small saucepan, combine 200g of high-quality blueberry jam and 15g of freshly squeezed lemon juice. Heat gently over medium-low heat until warmed through and slightly fluid.

Remove the warmed jam mixture from the heat. Stir in the bloomed gelatin until completely dissolved. Let the mixture cool to room temperature, ensuring it does not set completely.

In a large chilled bowl, whip 300g of cold heavy whipping cream with 30g of powdered sugar until medium peaks form.

Gently fold 1/3 of the whipped cream into the cooled blueberry mixture to lighten it. Carefully fold in the remaining whipped cream until smooth and airy, being careful not to deflate the cream.

Use immediately as a filling for pastries or cakes, or cover and chill in the refrigerator for at least 2 hours to set as a standalone dessert mousse.
