Strawberry Balsamic Vinaigrette

Hull and roughly chop 1 cup of fresh strawberries. Place them in a blender or food processor.

Add 1/4 cup of balsamic vinegar, 2 tablespoons of extra virgin olive oil, 1 tablespoon of honey or maple syrup, 1 tablespoon of fresh lemon juice, 1/2 teaspoon of Dijon mustard, 1/4 teaspoon of kosher salt, and 1/8 teaspoon of freshly ground black pepper to the blender.

Blend on high until the mixture is completely smooth and emulsified. Scrape down the sides as needed.

Taste the dressing and adjust seasonings as desired. If too thick, add a teaspoon or two of cold water to reach your preferred consistency.

Transfer the dressing to an airtight container. Chill for at least 15 minutes before serving to allow flavors to meld.
