Quick and Smooth Pretzel Cheese Sauce

Melt 2 tbsp unsalted butter in a small saucepan over medium heat.

Whisk in 2 tbsp all-purpose flour and cook for 1 minute to create a smooth roux.

Gradually whisk in 1 cup whole milk, ensuring no lumps form. Continue to whisk and cook for 2 to 3 minutes until the mixture slightly thickens.

Remove the saucepan from the heat. Gradually stir in 1 1/2 cups freshly grated sharp cheddar cheese, 1 tsp Dijon mustard, 1/4 tsp salt, and 1/4 tsp smoked paprika until the cheese is completely melted and the sauce is perfectly smooth. Serve immediately with warm pretzels.
