This simple pasta dish is elevated by the creamy goat cheese and bright lemon zest. A quick and easy weeknight meal that's both satisfying and flavorful.
Cook 1 pound of your favorite pasta according to package directions. Reserve 1/2 cup of pasta water before draining.
While the pasta is cooking, melt 2 tablespoons of butter in a large skillet over medium heat. Add 2 cloves of minced garlic and cook until fragrant, about 1 minute.
Add the cooked pasta to the skillet. Crumble 4 ounces of goat cheese over the pasta and add 1/4 cup of the reserved pasta water. Toss until the goat cheese melts and coats the pasta.
Stir in the zest of 1 lemon, 2 tablespoons of chopped fresh parsley, and salt and pepper to taste.
Serve immediately, garnished with additional parsley and a drizzle of olive oil.
