Salty Oven-baked Potatoes

Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.

Wash and dry 1.5 lbs of baby potatoes, then cut them in half.

In a large mixing bowl, toss the halved potatoes with 2 tbsp olive oil, 1.5 tsp coarse sea salt, and 1/2 tsp black pepper until completely coated.

Spread the potatoes in a single layer on the prepared baking sheet, cut side down for optimal browning.

Roast in the preheated oven for 30 to 35 minutes, or until the potatoes are fork-tender and deeply golden brown on the bottoms.

Remove from oven, let cool slightly, and serve hot.
