Grilled Chicken with a medium spice blend.
Preheat your grill to medium-high heat, approximately 400°F (200°C).
In a small bowl, mix 1 teaspoon of smoked paprika, 1/2 teaspoon of ground cumin, 1/2 teaspoon of garlic powder, 1/4 teaspoon of black pepper, and 1/4 teaspoon of cayenne pepper. Add 1/2 teaspoon of salt.
Lightly brush 1.5 lbs of boneless, skinless chicken breasts with olive oil, then rub the spice mixture evenly over both sides of each breast.
Place the chicken breasts on the preheated grill. Grill for 6-8 minutes per side, or until they reach an internal temperature of 165°F (74°C). Ensure they're cooked through and no longer pink in the center.
Remove from the grill and let rest for 5 minutes before serving. This allows the juices to redistribute, resulting in a more tender and flavorful chicken.
