A refreshing and light green salad tossed in a zesty homemade lemon vinaigrette.
In a small bowl, whisk together 3 tbsp olive oil, 2 tbsp fresh lemon juice, 1 tsp Dijon mustard, 1/4 tsp salt, and 1/8 tsp black pepper until emulsified. This is your lemon vinaigrette.
In a large salad bowl, combine 5 oz mixed greens.
Slice 1/2 cucumber, halve 1 cup cherry tomatoes, and thinly slice 1/4 red onion. Add these to the mixed greens.
Just before serving, drizzle the lemon vinaigrette over the salad and toss gently to coat.
