Savory and slightly sweet fritters featuring shrimp, grated apple and carrot, bound with flour and served with a tangy dill cream sauce.
Step 1: Peel and devein the shrimp. Chop into small pieces.
Step 2: Grate the apple and carrot using a box grater.
Step 3: In a large bowl, combine the chopped shrimp, grated apple, grated carrot, flour, egg, baking powder, salt, and pepper. Mix well to form a batter.
Step 4: Heat the vegetable oil in a large skillet over medium heat.
Step 5: Drop spoonfuls of the shrimp batter into the hot oil, being careful not to overcrowd the pan.
Step 6: Cook the fritters for 3-4 minutes per side, or until golden brown and cooked through. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
Step 7: While the fritters are cooking, prepare the creamy dill sauce. In a small bowl, whisk together the heavy cream, fresh dill, lemon juice, and garlic powder.
Step 8: Serve the apple carrot shrimp fritters warm with the creamy dill sauce on the side for dipping.
