A simple yet flavorful mashed sweet potato recipe, perfect as a side dish for any meal.
Preheat oven to 400°F (200°C). Wash 2 large sweet potatoes (about 1.5 pounds), prick them with a fork, and bake for 45-60 minutes, or until soft.
Let the sweet potatoes cool slightly, then peel them.
In a large bowl, mash the sweet potatoes with 4 tablespoons of unsalted butter, until smooth.
Stir in 1/4 cup of heavy cream or milk for extra creaminess.
Season with 1/2 teaspoon of salt, 1/4 teaspoon of ground nutmeg, and a pinch of black pepper to taste.
Serve hot, garnished with a sprinkle of fresh parsley or chopped pecans if desired.
