These lemon bars are a delightful balance of tart and sweet, perfect for an after-dinner treat with tea.
Preheat oven to 350°F (175°C). In a bowl, mix 1 1/2 cups all-purpose flour and 1/2 cup (1 stick) unsalted butter, softened, until crumbly. Press into the bottom of an ungreased 9x13 inch baking pan.
Bake crust for 18 minutes, or until lightly golden.
While the crust is baking, in a separate bowl, whisk together 2 cups granulated sugar, 4 large eggs, the juice and zest of 4 lemons, and 1/4 cup all-purpose flour.
Pour lemon mixture over the warm crust and bake for 20-25 minutes, or until the filling is set. Let cool completely before cutting into bars. Dust with powdered sugar before serving.
