Mixed Greens with Lemon-herb Vinaigrette

In a small bowl, whisk together 1/4 cup olive oil, 2 tbsp fresh lemon juice, 1 tsp Dijon mustard, 1 tbsp chopped fresh parsley, 1 tbsp chopped fresh chives, 1/2 tsp salt, and 1/4 tsp black pepper until emulsified.

In a large salad bowl, combine 5 oz mixed greens, 1 cup halved cherry tomatoes, and 1/2 diced large cucumber.

Just before serving, pour the vinaigrette over the salad and toss gently to coat.
