Slow-cooked BBQ pulled chicken, perfect for sandwiches or salads. The homemade BBQ sauce adds a rich, smoky flavor that complements the tender chicken beautifully.
In a slow cooker, place 2 lbs of boneless, skinless chicken thighs.
In a saucepan, combine 1 cup of ketchup, 1/2 cup of apple cider vinegar, 1/4 cup of brown sugar, 2 tablespoons of Worcestershire sauce, 1 tablespoon of smoked paprika, 1 teaspoon of garlic powder, 1/2 teaspoon of onion powder, and 1/4 teaspoon of cayenne pepper. Simmer for 10 minutes, stirring occasionally.
Pour the BBQ sauce over the chicken in the slow cooker.
Cook on low for 6 hours or on high for 3 hours, or until the chicken is easily shredded with a fork.
Remove the chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker and toss with the remaining sauce.
Serve the BBQ pulled chicken on buns, over rice, or in salads. Garnish with coleslaw or pickles.
