A quick and elegant French dessert, perfect for a sweet craving.
In a small bowl, whisk together 2 large eggs, 1 tablespoon of granulated sugar, and 1/2 teaspoon of vanilla extract until well combined and slightly frothy.
Heat 1 tablespoon of unsalted butter in a non-stick skillet over medium-low heat until melted and shimmering.
Pour the egg mixture into the skillet. Let it cook undisturbed for 2-3 minutes, until the edges start to set.
Gently slide a spatula under the fried egg and flip it. Cook for another 1-2 minutes until the other side is lightly golden brown.
Carefully transfer the fried egg to a serving plate. Dust with powdered sugar and a sprinkle of cinnamon. Serve immediately.
