A refreshing salad of mixed greens tossed in a bright, zesty lemon vinaigrette.
In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of fresh lemon juice, 1 teaspoon of Dijon mustard, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper until well combined and emulsified.
Place 5 ounces of mixed greens in a large salad bowl.
Just before serving, pour the lemon vinaigrette over the mixed greens and toss gently to coat.
