A light and nutritious side of perfectly cooked quinoa, brightened with fresh parsley and dill.
Rinse 1 cup of quinoa thoroughly under cold water using a fine-mesh sieve.
Combine the rinsed quinoa and 2 cups of vegetable broth (or water) in a medium saucepan. Add 1/4 teaspoon of salt and 1/8 teaspoon of black pepper.
Bring the mixture to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 15 minutes, or until all the liquid is absorbed.
Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
Stir in 2 tablespoons of chopped fresh parsley and 1 tablespoon of chopped fresh dill before serving.
