Hull and roughly chop 1 cup of fresh strawberries. Place them in a blender or food processor.
Add 1/4 cup of balsamic vinegar, 2 tablespoons of extra virgin olive oil, 1 tablespoon of honey or maple syrup, 1 tablespoon of fresh lemon juice, 1/2 teaspoon of Dijon mustard, 1/4 teaspoon of kosher salt, and 1/8 teaspoon of freshly ground black pepper to the blender.
Blend on high until the mixture is completely smooth and emulsified. Scrape down the sides as needed.
