A quick and delicious grilled flatbread pizza featuring crispy crust, tangy sauce, melty mozzarella, and savory pepperoni. Perfect for a weeknight meal.
Preheat your gas grill to medium-high heat (about 400-450°F / 200-230°C). If using charcoal, arrange coals for indirect heat with a direct searing zone.
Lightly brush both sides of each 8-inch flatbread with 1 tablespoon of olive oil. If desired, sprinkle with a pinch of garlic powder and a pinch of salt.
Place the flatbreads directly on the grill grates over direct heat for 1-2 minutes per side, until lightly charred and crisp. Watch carefully to prevent burning.
Remove the flatbreads from the grill. Spread 1/4 cup of pizza sauce evenly over each grilled flatbread, leaving a small border for the crust.
Distribute 1/2 cup of shredded mozzarella cheese over the sauce on each flatbread. Arrange 1 ounce of pepperoni slices on top of the cheese.
Carefully transfer the assembled flatbread pizzas back to the grill. If using a gas grill, reduce heat to medium-low or move to an indirect heat zone. Close the lid and cook for 8-10 minutes, or until the cheese is melted and bubbly, and the crust is golden and crisp. If using charcoal, place over indirect heat.
Remove pizzas from the grill. Garnish with 1 tablespoon of fresh basil leaves, if desired. Let cool for a minute before slicing and serving.
