A simple yet elegant shrimp scampi recipe that's ready in under 30 minutes.
In a large skillet, melt 4 tablespoons of unsalted butter with 2 tablespoons of olive oil over medium heat.
Add 4 cloves of minced garlic to the skillet and sauté for about 1 minute, until fragrant.
Add 1 1/2 pounds of peeled and deveined large shrimp to the skillet. Cook for 2-3 minutes per side, until pink and opaque.
Stir in 1/4 cup of dry white wine or chicken broth, 2 tablespoons of lemon juice, and 1/4 teaspoon of red pepper flakes. Bring to a simmer and cook for 1-2 minutes, allowing the sauce to reduce slightly.
Stir in 2 tablespoons of chopped fresh parsley and season with salt and black pepper to taste.
Serve immediately over cooked pasta, rice, or with crusty bread for dipping. Garnish with additional parsley and lemon wedges, if desired.
