Crispy bacon strips coated in a sweet and savory maple glaze, perfect for a unique breakfast side.
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or foil and place a wire rack on top.
Arrange 8 slices of thick-cut bacon in a single layer on the wire rack.
In a small bowl, whisk together 1/4 cup of pure maple syrup, 2 tablespoons of light brown sugar, 1/4 teaspoon of freshly ground black pepper, and a pinch of cayenne pepper (if using).
Brush the maple glaze generously over both sides of the bacon slices.
Bake for 15-20 minutes, or until the bacon is crispy and the glaze is caramelized. Keep a close eye on it to prevent burning.
Carefully transfer the candied bacon to a plate lined with fresh parchment paper to cool. It will crisp up further as it cools.
