A light and refreshing cucumber and mint salad that is easy on the stomach and helps to rehydrate and soothe.
Wash and thinly slice 1 large cucumber.
In a bowl, combine the sliced cucumber with 2 tablespoons of finely chopped fresh mint.
Add 1 tablespoon of rice vinegar, 1/2 teaspoon of sugar, and a pinch of salt. Mix gently.
Refrigerate for at least 15 minutes to allow the flavors to meld. Serve chilled.
