A fiery and flavorful chicken dish with a unique blend of spices and textures.
In a bowl, combine 1 tablespoon of smoked paprika, 1 teaspoon of cayenne pepper, 1 teaspoon of cumin, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1/4 teaspoon of black pepper, and 1/2 teaspoon of salt. Mix well.
Add 1.5 lbs of boneless, skinless chicken thighs, cut into 1 inch pieces, into the bowl and coat the chicken evenly with the spice mixture.
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the marinated chicken and cook for 6-8 minutes, or until browned on all sides.
Add 1 cup of diced yellow onion and 2 cloves of minced garlic to the skillet. Cook for another 3-4 minutes, or until softened.
Pour in 1 can (14.5 oz) of diced tomatoes, 1/2 cup of chicken broth, and 1/4 cup of chopped cilantro. Bring to a simmer, then reduce the heat to low.
Cover and simmer for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened slightly. Stir occasionally.
Stir in 2 tablespoons of lime juice just before serving. Serve hot, garnished with fresh cilantro and a dollop of sour cream, if desired.
