A delicious and simple sweet potato mash.
Preheat oven to 400°F (200°C). Wash 2 medium sweet potatoes (about 1.5 lbs total) and pierce several times with a fork.
Bake sweet potatoes for 45-60 minutes, or until very soft. Let them cool slightly.
Cut the sweet potatoes in half and scoop out the flesh into a bowl. Discard the skins.
Add 2 tablespoons of unsalted butter, 1/4 cup of heavy cream, 1/2 teaspoon of ground cinnamon, 1/4 teaspoon of ground nutmeg, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper to the bowl.
Mash with a potato masher or blend with an electric mixer until smooth and creamy.
Taste and adjust seasonings as needed. Serve hot.
