A simplified, sheet pan version of the classic seafood boil, perfect for a quick and easy weeknight dinner.
Preheat oven to 400°F (200°C).
In a large bowl, toss 1 pound of peeled and deveined large shrimp, 1 pound of andouille sausage (cut into 1-inch pieces), 1 pound of small red potatoes (halved or quartered if large), 2 ears of corn (cut into 2-inch sections), and 1 diced yellow onion with 2 tablespoons of olive oil, 2 tablespoons of cajun seasoning, 1 teaspoon of smoked paprika, 1/2 teaspoon of garlic powder, and 1/4 teaspoon of cayenne pepper (optional).
Spread the mixture evenly on a large baking sheet.
Bake for 15-20 minutes, or until shrimp is pink and cooked through, potatoes are tender, and sausage is heated through.
Remove from oven and garnish with fresh parsley and lemon wedges. Serve immediately.
