Caprese Avocado Toast with Pesto Drizzle

Toast 2 slices of your favorite bread until golden brown.

While the bread is toasting, mash 1 ripe avocado in a small bowl with a fork. Season with salt and freshly ground black pepper to taste.

Spread the mashed avocado evenly over the toasted bread slices.

Slice 4 ounces of fresh mozzarella into 1/4-inch thick slices. Arrange the mozzarella slices over the avocado.

Slice 1 cup of cherry tomatoes in half. Arrange the halved cherry tomatoes over the mozzarella.

Drizzle 2 tablespoons of prepared pesto over the toast. Season with a pinch of red pepper flakes, if desired.

Serve immediately and enjoy!
