A refreshing watermelon and feta salad with mint and a tangy lime dressing, perfect for complementing grilled barbecue chicken.
Cube 4 cups of seedless watermelon and place in a large bowl.
Crumble 4 ounces of feta cheese over the watermelon.
Add 1/4 cup of fresh mint leaves, roughly chopped, to the bowl.
In a small bowl, whisk together the dressing: 3 tablespoons of lime juice, 2 tablespoons of olive oil, 1/2 teaspoon of honey, and a pinch of salt and pepper.
