A quick and flavorful Italian-inspired dish featuring grilled chicken and zucchini noodles for a low-carb option.
Preheat your stovetop grill pan over medium-high heat.
In a bowl, toss the chicken cutlets with 1 tbsp of olive oil, 1 tsp of Italian seasoning, salt, and black pepper.
Grill chicken cutlets for 4-5 minutes per side, or until cooked through.
While chicken is grilling, sauté the minced garlic in the remaining 1 tbsp of olive oil in a separate pan for 30 seconds, until fragrant.
Add the zucchini noodles to the pan with the garlic, and sauté for 3-4 minutes, until tender-crisp.
Stir in 1/4 cup of the chicken broth and cook for 1 minute, until slightly reduced.
Season the zucchini noodles with salt and pepper. Serve the grilled chicken cutlets over the zucchini noodles, and top with parmesan cheese.
