Prepare the rice: In a saucepan, combine 1 cup of long-grain rice with 2 cups of water and 1/2 teaspoon of salt. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the rice is cooked through. Fluff with a fork.
Cook the protein: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add 1 pound of ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess fat. Stir in 1 packet of taco seasoning and 1/4 cup of water. Simmer for 5 minutes.
Warm the beans: In a separate saucepan, heat 1 (15-ounce) can of black beans, drained and rinsed, over medium heat until warmed through.
Assemble the bowls: Divide the cooked rice among bowls. Top with the seasoned ground beef, black beans, shredded lettuce, diced tomatoes, shredded cheese, corn, and sour cream. Garnish with cilantro and avocado slices.
