Flaky salmon baked to perfection, paired with vibrant quinoa tossed with fresh herbs, lemon, and a touch of garlic. A bright and flavorful dinner that's both healthy and satisfying.
Preheat your oven to 400°F (200°C).
Place 2 (6-ounce) salmon fillets on a baking sheet lined with parchment paper. Drizzle each fillet with 1 tablespoon of extra virgin olive oil and season with salt, black pepper, and a pinch of smoked paprika.
Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
While the salmon is baking, prepare the quinoa. Cook 1 cup of quinoa according to package directions. Once cooked, fluff with a fork.
In a large bowl, combine the cooked quinoa with 1/4 cup of chopped fresh parsley, 1/4 cup of chopped fresh cilantro, the zest and juice of 1 lemon, 1 minced clove of garlic, and 2 tablespoons of extra virgin olive oil. Season with salt and pepper to taste.
Serve the baked salmon over the zesty quinoa. Garnish with extra lemon wedges if desired. Enjoy!
