Classic buttery spritz cookies, perfect for any occasion.
Preheat your oven to 375°F (190°C). Ensure the racks are in the center.
In a large bowl, cream together 1 cup (2 sticks) of unsalted butter, softened, with ¾ cup of granulated sugar until light and fluffy, about 3 minutes.
Add 1 large egg and 1 teaspoon of pure vanilla extract to the mixture, combining well.
In a separate bowl, whisk together 2 ½ cups of all-purpose flour and ½ teaspoon of fine salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms.
Load the dough into a cookie press fitted with your desired disk.
Press the dough onto ungreased baking sheets.
Bake for 8-10 minutes, or until edges are lightly golden.
Remove from the oven and let cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
Decorate with sprinkles, icing, or melted chocolate if desired.
