A simple yet elegant arugula salad with a bright lemon vinaigrette and shaved Parmesan cheese.
In a small bowl, whisk together 3 tablespoons of extra virgin olive oil, 2 tablespoons of fresh lemon juice, 1 teaspoon of Dijon mustard, 1/2 teaspoon of honey, salt and pepper to taste.
In a large bowl, combine 5 ounces of fresh arugula, 1/4 cup of shaved Parmesan cheese.
Drizzle the vinaigrette over the arugula and Parmesan cheese. Toss gently to combine.
