A decadent chocolate chip cookie baked in a cast iron skillet, perfect for sharing.
Preheat oven to 350°F (175°C). Place 10-inch cast iron skillet in oven while preheating.
In a large bowl, cream together 1 cup (2 sticks) of softened unsalted butter and 1 cup packed light brown sugar and 1/2 cup granulated sugar until light and fluffy.
Beat in 2 large eggs one at a time, then stir in 1 teaspoon of vanilla extract.

Stir in 2 cups of semisweet chocolate chips.
Carefully remove the hot skillet from the oven. Melt 2 tablespoons of butter in the skillet, swirling to coat the bottom and sides.
Press the cookie dough evenly into the prepared skillet.
Bake for 25-30 minutes, or until the edges are golden brown and the center is set.
Let cool slightly before slicing and serving. Top with vanilla ice cream if desired.
