A simple and flavorful sheet pan dinner with Italian sausage, bell peppers, onions, and potatoes.
Preheat oven to 400°F. Toss 1 lb. of Yukon gold potatoes (cut into 1-inch pieces), 1 sliced red bell pepper, 1 sliced yellow bell pepper, and 1 sliced yellow onion with 2 tablespoons of olive oil, salt, and pepper on a large sheet pan.
Add 1 lb. of Italian sausage (cut into 1-inch pieces) to the sheet pan and toss to combine.
Roast for 25 minutes, or until the vegetables are tender and the sausage is cooked through.
Serve immediately.
