A refreshing and vibrant Corn and Avocado Salad, perfect as a side dish to complement grilled barbecue chicken.
In a large bowl, combine 3 cups of grilled corn kernels, 2 diced avocados, 1/2 cup of finely chopped red onion, and 1/4 cup of chopped fresh cilantro.
In a small bowl, whisk together 3 tablespoons of lime juice, 2 tablespoons of olive oil, 1 teaspoon of honey, 1/2 teaspoon of cumin, and a pinch of salt and pepper.
Pour the dressing over the corn and avocado mixture. Gently toss to combine.
Serve immediately or chill for later. Garnish with extra cilantro, if desired.
