A quick and easy tortellini dish with a creamy cheese and spinach sauce.
Cook 1 (20 ounce) package of cheese tortellini according to package directions. Drain and set aside.
While the tortellini is cooking, melt 2 tablespoons of butter in a large skillet over medium heat.
Add 1/2 cup of finely chopped shallots to the skillet and cook until softened, about 3 minutes.
Stir in 10 ounces of fresh spinach and cook until wilted, about 2 minutes.
Pour in 1 cup of heavy cream and bring to a simmer. Reduce heat and stir in 1/4 cup of grated Parmesan cheese and 1/4 teaspoon of ground nutmeg. Season with salt and black pepper to taste.
Add the cooked tortellini to the skillet and toss to coat with the sauce.
Serve immediately, garnished with additional Parmesan cheese and a sprinkle of red pepper flakes, if desired.
